Joyce Destang did not begin her career dreaming of becoming one of the Caribbean’s notable hoteliers.
She was a teacher.
Her husband, Desmond Destang, was also an educator.
After leaving teaching, Joyce developed experience through business ventures including retail and real estate. Those investments eventually gave the couple the confidence to consider something considerably bigger.
Hospitality.
The opportunity came in the early 1990s as Saint Lucia’s tourism industry continued to develop.
Joyce initially considered investing in apartments. But after encouragement to look at tourism instead, she and Desmond made a decision that would change their lives — and eventually create a lasting Saint Lucian hospitality company.
45 Rooms and a Leap of Faith
In 1994, Joyce and Desmond Destang committed themselves to developing what would become Bay Gardens Hotel in Rodney Bay.
There was no international hotel corporation behind them.
There was no generations-old family resort empire waiting for them.
And Joyce was neither a trained hotelier nor an accountant.
Years later, while celebrating Bay Gardens Resorts’ 30th anniversary, Joyce recalled just how significant the decision had been: she and Desmond had put essentially everything they had into starting with 45 rooms.
The gamble worked.
Bay Gardens Hotel developed a reputation for delivering warm Caribbean hospitality, strong service, and good value while providing travelers with a convenient location in Rodney Bay Village.
More importantly, the Destangs had demonstrated that a locally owned Saint Lucian hotel could compete successfully in an industry where many prominent Caribbean resorts were backed by international companies.
Building a Different Kind of Caribbean Hotel
From the beginning, Joyce Destang had a clear idea of what she wanted Bay Gardens to represent.
Rather than attempting to reproduce a foreign interpretation of Caribbean luxury, she envisioned hospitality that was unmistakably Caribbean.
The formula centered on excellent service, strong value, and an authentic island experience.

In 2002, the former Palm Tree Hotel was acquired and reopened as Bay Gardens Inn, adding a smaller and more intimate accommodation option to the collection.

The original Bay Gardens properties offered convenient Rodney Bay locations, but Joyce recognized the competitive advantage that a true beachfront resort could provide.
That led to one of the most important investments in the company’s history.
In 2007, Bay Gardens Beach Resort & Spa opened along beautiful Reduit Beach.
The move took Bay Gardens into the upscale beachfront resort market and dramatically expanded what the locally owned company could offer its guests.
The portfolio would continue growing to include Bay Gardens Marina Haven, near Rodney Bay Marina, as well as the private luxury accommodations of Water’s Edge Villas.
Together, the properties allow travelers to experience different sides of Rodney Bay — from intimate hotels and marina accommodations to private villas and a full-service Caribbean beachfront resort.
Keeping Tourism Ownership in Saint Lucia

She received the Order of the British Empire (OBE) for her contributions and was named Saint Lucia Chamber of Commerce Entrepreneur of the Year in 2014.
In 2020, Saint Lucia honored Joyce with the Gold Medal of Merit for long and meritorious service in entrepreneurship.
The recognition represented an extraordinary journey for someone who entered hospitality without formal hotel training.
The former teacher had become one of Saint Lucia’s most accomplished homegrown entrepreneurs.
A Family Business Becomes a Multigenerational Legacy
Perhaps one of the most significant achievements of Joyce and Desmond Destang is that Bay Gardens did not remain solely the founders’ business.
It became a family legacy.
Their son Sanovnik Destang joined the company and eventually became Executive Director, taking an increasingly prominent role in the growth and direction of Bay Gardens Resorts.
The next generation has helped modernize and expand the business while maintaining the locally rooted philosophy established by Joyce and Desmond.
Other members of the Destang family have also become involved in tourism and entrepreneurship, extending the family’s impact on Saint Lucia’s hospitality industry.
That transition matters.
Many founder-led businesses struggle to survive beyond their first generation. Bay Gardens demonstrates how a locally created Caribbean hospitality company can develop institutional strength while remaining connected to the family and community that created it.
